SPINACH ONION CHICKEN PASTA

This recipe came from not having enough ingredients to make a bacon onion carbonara but I didn't have bacon or parmesan cheese so I made do with what I had. This is super simple and not to mention decently healthy. If you know how to oil a pan, and put ingredients in it and stir it up (basically stir-fry but not) then you're good to go! This is just a serving for one, so if you want to serve more people, go ahead and double or triple the ingredients!





1. Start off by boiling a pot of water to cook your pasta in. Once it starts to boil, add your past in. Check the label on your pasta to see how long to cook it for. Make sure you taste test it once in a while too to make sure it's cooked enough, and not overcooked. 

2. Next,  cut up your vegetables (onion and spinach) preferably in short strips. And set that aside. 

3. Take your chicken breast and cut that into small chunks and season very lightly with some salt and better and set that aside.  ( your water should be boiling at this point, so add in your pasta! ) 

4. Oil your frying pan with 1-2 tablespoons of olive oil and wait for it to get hot. As soon as it does, add in your onions with a pinch of salt and sauté them for 1 minute until they're slight transparent and then add in your chicken pieces and continue to cook. (Also stir your pasta around to make sure it's not sticking to the bottom) 

5. When your chicken seems about cooked, add in your spinach. At this point you can turn off your stove because the spinach will get cooked with the remaining heat and you don't want the rest of your items to burn. 

6. Wait for your pasta to be finished cooking, and once it's done, drain it and set it on a plate and sprinkle your favourite cheese on it. ( In my case, I used cheddar)

7. Lastly, place the rest of your ingredients that were on the pan onto your pasta and voila! (Just watch as the cheese melts and enjoy! 

This is a perfectly simple dish you can cook for friends and family!
